Gingerbread

Gingerbread

  • 0ne-half cup sugar*
  • One-half cup butter and lard mixed (I think you can use just butter)
  • One and one-half teaspoons baking soda
  • One teaspoon cinnamon
  • One teaspoon ginger
  • One egg
  • One cup Brer Rabbit molasses
  • Two and one-half cups sifted flour
  • One-half teaspoon cloves
  • One-half teaspoon salt
  • One cup hot water

Cream butter and sugar. Add beaten egg, molasses and then the dry ingredients which have been sifted together. Add hot water last and beat until smooth. Bake in greased shallow pan (a 9” x 12” cake pan) for 40-45 minutes in moderate oven of 350°. Makes 15 portions. Serve with whipped cream.

*Healthy Option: unrefined sugar (Sucanat or Rapadura)
