Chocolate Covered Potato ChipsINGREDIENTS
DIRECTIONS: You will need a cooking thermometer for this to work! The thermometer only needs to reach 110 degrees F. You may need to use a meat thermometer instead of a candy thermometer. So, check your thermometer before you start. You will also need a double boiler. If you don’t have a double boiler, you can use a metal bowl that will sit over the top of a pot that will hold your simmering water. Put three-fourths of the chocolate into the top of the double boiler or metal bowl. Stir occasionally as the chocolate melts. For the chocolate to set correctly, we need to temper it. So, your melted chocolate will need to reach 110 degrees F. When you reach 110 degrees, take the chocolate off the stove and stir in the rest of the chocolate until it melts. You want to stir the chocolate until the temperature drops to 90 degrees. Now the fun part! Use a pair of tongs to carefully dip the chips into the chocolate. Do this one at a time. Cool them on a piece of waxed paper. Let them cool. |
