Norwegian Toscakake


NORWEGIAN TOSCAKAKE

Lightly grease or spray a 9 inch spring form pan (Mom used a pan about 7 1/2 by 11 1/2 but a 9X9 should work too). Heat oven to 350 degrees.

  • One and one-fourth cup flour
  • One-half tsp baking powder
  • One-fourth tsp salt
  • 4 eggs separated– room temperature
  • One-half cup sugar
  • One-half cup butter melted and cooled
  • 1 tsp almond extract

Beat egg whites until foamy, gradually add sugar. Beat until stiff peaks form, about 5 minutes. Use separate bowl to beat egg yolks until light and lemon colored. Fold whites into yolks using light touch. Mix flour, baking powder and salt. Gently fold in flour mixture in 4 batches. Fold in melted butter and almond flavoring. Pour into prepared pan. Bake 22 to 25 minutes or until it springs back in center and pulls away from sides of pan. Remove and cover with topping (below). Heat the broiler to high. Place pan under broiler and broil until topping is golden brown, 1 or 2 minutes. Watch carefully. Remove from oven and cool on rack 5 minutes. Run a metal spatula around side of pan to loosen. Remove from pan and cool completely.

TOPPING

  • One-half C sugar
  • 2 Tbls milk
  • 2 Tbls flour
  • three-fourths C sliced almonds, toasted
  • One-half cup butter
  • one-half tsp almond extract

While baking melt the butter, add milk combine sugar and flour and add to butter and milk. Cook over low heat stirring constantly until thickened (1-2 minutes). Stir in almonds and extract.
