Ring Pasta Salad

At one of our last Nordic Needle staff lunches, Gwen brought this delicious salad. Many of us have several pasta salad recipes but this one had a little zing to it. The secret ingredient is Catalina salad dressing! Enjoy!

Ring Pasta Salad

  • 2 7 oz. boxes ring pasta, cooked
  • 8 hard boiled eggs, cooled and chopped
  • One-half to three-fourths cup chopped sweet onions
  • 1 cup chopped celery
  • One and one-half cup Miracle Whip (fat free preferred)*
  • Three-fourths to one cup half & half
  • 1 cup Catalina salad dressing – or other red spicy bottled dressing if Catalina is not available
  • 1 cup shredded cheddar cheese

*Healthy Option: plain mayonnaise made with canola oil

Mix together the pasta, eggs, celery and onions. Mix the Miracle Whip, half & half and Catalina dressing until smooth. Gwen says you may have to increase the amounts if the salad seems dry. Pour over the pasta mixture and sprinkle the cheese over right before serving.
