Chicken Pasta Salad

Chicken Pasta Salad

  • 1 – 16 oz. box of Rotini Pasta
  • 2 chicken breasts boiled in chicken broth (can use leftover roasted chicken or turkey)
  • 1 medium onion, finely chopped
  • 2 cups broccoli flowerettes, separated
  • 6 or 7 Roma or cherry or grape tomatoes, diced small
  • 8 oz. fresh sliced mushrooms

Cook pasta until almost done

Shred the chicken into small thin strips

Add veggies and pasta and toss with vinaigrette dressing
