Chicken Surprise

(or as Joyce called it, Experimental Chicken – she is a newly-retired chemist)

  • 3 pounds frozen boneless, skinless chicken breasts, mostly thawed. Cut each piece into three pieces or more.
  • 1 stick of butter, melted in the crock pot or skillet
  • One cup fresh portabella mushrooms, sliced
  • Fresh orange or yellow peppers, sliced – quantity as desired
  • One envelope dry Lipton Onion Soup mix
  • One can Cream of Chicken soup or Cream of Mushroom soup
  • One package (8 oz) Cream Cheese

You can make this a little “less rich” by using the low-fat soup, cream cheese and a butter substitute – you make the choice. If you use a crock pot, put all the ingredients in and cook on high for 4-5 hours, stirring a couple times. If you use a large skillet, it takes about 45 minutes for it to cook, and the flavors.

Serve with rice or noodles, and your favorite vegetable. I think corn, carrots, or peas would be my choice. Enjoy!
