Coffee Cake

Coffee Cake

  • 1 cup vegetable oil
  • 1 and one-half cups sugar
  • 1 tsp. vanilla
  • 4 eggs
  • One-fourth cup milk
  • 3 cups flour
  • 1 one-half tsp. baking powder
  • 1 can pie filling – I used blueberry

Cream oil and sugar; add eggs one at a time. Add milk and vanilla. Add flour and baking powder; mix well. Spread two-thirds of batter in an 11” x 15” pan. Spread pie filling on top. Drop remaining batter on top. Sprinkle with sugar and cinnamon combination, about three-fourths cup total. Bake at 350 degrees for 45 minutes. Drizzle with a powder sugar glaze.
