Pulled Chicken Sandwiches

Pulled Chicken Sandwiches

  • 4 large skinless boneless chicken breasts
  • 1 and one-half cups chicken broth
  • One-half tsp. both salt and pepper
  • Two cloves garlic, finely chopped
  • One medium onion, finely chopped or one-fourth cup dried onion flakes
  • One cup apple cider vinegar
  • One cup barbeque sauce
  • One-fourth cup brown sugar

In a covered large heavy frying pan, cook the chicken breasts in the chicken broth, until it is cooked. Remove the cooked chicken and separate it with two forks and set it aside. In the pan with juice, add the salt and pepper, garlic, and onion, apple cider vinegar and your favorite barbeque sauce. Cook and stir until the flavors blend. Add the chicken back into the mixture and add the brown sugar. Simmer for at least a half hour on low heat.

Serve on buns or hard rolls. It is really good with a little cheese sprinkled over the top. If you have extra juice, use it to spoon on top of the meat, or dip like a French Dip sandwich.
