Wild Rice Salad

Wild Rice Salad

  • 3 cups cooked, chilled wild rice
  • 2 unpeeled red apples, diced
  • 1 T. lemon juice
  • 2 T. brown sugar
  • One-half cup sour cream
  • One-third cup mayonnaise
  • 2 ribs celery, sliced
  • 1/2 cup peanuts

Toss diced apples with lemon juice and brown sugar. Stir in celery and wild rice. Blend mayonnaise and sour cream until smooth, mix all together. Add peanuts just before serving. (cashews or almonds would work well too)

Note: Excellent way to prepare wild rice:

  • 2 C wild rice, washed
  • 6 C water

Set oven at 450 degrees. Bring water to full boil, add wild rice, stir well. Put tight cover on pan and place in oven. Shut off oven and leave in overnight without opening oven door Perfect rice every time! Use heavy pan that will hold heat well.
