Chinese Chicken Pizza

This week I would like to share a quick and delicious recipe that was made by cousin Treva for a little "girls lunch" on my patio in August.

Chinese Chicken Pizza

  • 5 Pita bread rounds (store bought) brushed with EVOO, (Extra Virgin Olive Oil)
  • One-fourth cup Hoisin sauce – available in the Asian section of most grocery stores
  • 2 cooked chicken breasts, skin and bones removed – or a great way to use left-over chicken
  • 4 green onions, finely sliced
  • One-half red bell pepper (or green, orange or yellow), cut into thin strips
  • Two-third cup lightly-packed cilantro leaves without the stems
  • 1 cup mozzarella cheese

Directions: Spread Hoisin sauce over the Pita bread and place other ingredients evenly on top, ending with the cheese. Bake in 375 degree oven for 10 minutes or until cheese is melted and nicely browned. Use your imagination or left-overs to embellish toppings with other ingredients. I like cashew nuts so I would use chopped cashews as another ingredient.
