Sausage Potato Soup

Sausage Potato Soup

  • 1 lb. spicy Italian sausage – fried and crumbled
  • 1/2 lb. smoked bacon – chopped into small pieces
  • 4 cups water
  • 2 – 14.5 oz. cans chicken broth or 4 cups
  • 2 large or three medium potatoes – scrubbed clean and sliced with skins on
  • 2 garlic cloves crushed
  • 1 med. onion finely chopped
  • 2 cups chopped kale
  • 1 cup half and half (half cream/half milk)
  • salt and pepper – to taste

In a skillet, brown the sausage, breaking it into small pieces as you fry it. Drain off the fat and set aside.

In the same skillet, fry the bacon pieces; drain and set aside.

Place water, broth, potatoes, garlic, and onion in a soup pot; simmer over medium heat until potatoes are tender.

Add sausage and bacon to pot; simmer for 10 minutes.

Add kale and half and half to pot; season with salt and pepper; heat through.
