Turkey Salad
- Four cups diced cooked turkey – mix of white and dark meat
- One cup thinly-sliced celery
- One cup red grapes, cut in half
- One-half cup finely chopped red onion – or green onion
- One-fourth cup chopped red or green pepper
- One-half cup chopped cashews
- Two-thirds cup mayonnaise
- Two tablespoons half ‘n half or 2% milk
- Two Tablespoons sugar
- 1 Tablespoon white vinegar
- One-fourth teaspoon salt
- One-fourth teaspoon pepper
Combine turkey, celery, grapes, onion and peppers in a large bowl. Mix mayonnaise, half ‘n half, sugar, vinegar, salt and pepper together and pour over the turkey mixture. Mix well. Refrigerate until serving and sprinkle the chopped cashew nuts over the top right before serving. Serve with lettuce, on croissants, or as a tasty side dish. More Mayo can be added if it is too dry.
