Puffy French Toast

Batter:

  • 1/2 cup milk
  • 1 egg
  • 3/4 cup packaged pancake mix
  • 4 day-old white bread slices, crust removed, or not.
  • 1/2 cup shortening
  • Warm maple syrup or butter and powdered sugar

1. Make batter: In medium bowl, with rotary beater, beat milk, egg, and pancake mix just until combined.

2. Cut each bread slice in half, on diagonal. Dip bread into batter, coating completely. Then let bread stand in batter 1 minute. If bread is not old, omit this step.

3. Meanwhile, slowly heat shortening in heavy, 8" skillet.

4. In hot shortening, sauté bread slices, 2 at a time, until golden-brown and puffy — about 3 minutes on each side. Serve with warm maple syrup.

This recipe will serve more than 2. Keep making the toast till batter is gone. Usually 4 slices of bread.
