Egg Bake

  • One and one-half pound pork sausage, seasoned (could substitute bacon or ham pieces)
  • 12 eggs
  • 3 cups shredded Cheddar cheese
  • one-half cup minced onions
  • three-fourths cup chopped green pepper
  • 2 cups sliced fresh mushrooms
  • one cup whipping cream

Brown sausage and drain well. Break eggs into a greased 9" x 13" pan; poke the yolks and stir gently. Top eggs with browned sausage, half of cheese, and all of onions, green pepper and mushrooms. Pour cream over top; then add rest of cheese. Refrigerate overnight. Bake at 350 degrees for one hour. Let stand 10 minutes before serving.

Serve with fresh fruit and muffins or toast.
