Banana Bars

I just made these delicious bars last week because I had some over-ripe bananas that needed to either be thrown or baked into something. They are really delicious and quick to make. I didn’t even use an electric mixer; just used a spoon to stir!

Banana Bars

  • 1 cup sugar
  • 1 cup mashed very ripe bananas (I used three)
  • One-third cup vegetable oil
  • 2 eggs
  • 1 cup flour – I used whole wheat
  • 1 tsp. baking powder
  • one-half tsp. baking soda
  • one-half teaspoon ground cinnamon
  • one-fourth teaspoon salt

Heat oven to 350°F. Grease the bottom and sides of a 9" x 13" cake pan with spray or shortening. Mix together the sugar, bananas, oil, and eggs with a spoon. Mix dry ingredients together in a smaller bowl and then add to the moist ingredients. Stir until they are mixed together completely. Pour into the pan and bake for 25-30 minutes or until a toothpick comes out clean.

Frost with this delicious Cream Cheese Frosting

  • 3 oz. cream cheese, softened
  • 6 Tablespoons butter, softened
  • 1 tsp. vanilla
  • 1 and one-half cup powdered sugar

Mix cream cheese, butter and vanilla with electric mixer on medium speed until blended. Gradually bet in powdered sugar with spoon until smooth and spreadable.
