Spice Cake from the 1940’s

  • 1 cup sugar*
  • 2 eggs
  • 4 Tablespoons butter
  • One-half cup sour milk (use buttermilk or put some vinegar in milk to make it sour)
  • One-half cup strong coffee
  • Two and a half cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg

Cream sugar and butter, add milk, eggs, coffee, and flour with all the spices mixed in.

That’s all it says in the old book so I would suggest you use a 9" x 13" pan that you have sprayed with oil and bake at 350° until done. Use a wooden toothpick to test the center of the cake to see if the toothpick comes out clean. If it is still gooey, continue to bake a few more minutes until it is done.

*Healthy Option: unrefined sugar (Sucanat or Rapadura)
