Norwegian Waffles

Norwegian Waffles

  • 1 1/2 cups flour
  • 2 Tablespoons sugar
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 1 3/4 cups milk
  • 3 Tablespoons melted shortening
  • 1 teaspoon vanilla extract

Preheat the waffle iron. Sift together the flour and baking powder and set aside. First beat together the eggs and sugar. Add the shortening, milk, vanilla and salt and mix well. Add the flour mixture and mix until smooth. Irons will vary so familiarize yourself with the one you will be using. We got to use a waffle iron at the hotel in Bergen. We sprayed the iron with a cooking spray and then poured in a little of the batter. It took a little longer to cook than we thought, but continual peeking didn’t help! Be patient.

I can remember one Christmas where my mom made small waffles, cooking them until they were a little browner and kind of crispy. While they cooled, she melted chocolate and we dipped a side of each waffle into the chocolate. Yummy and different!
