Chicken Cashew Casserole

Chicken Cashew Casserole

  • 2 T. butter
  • one-fourth cup chopped onion
  • 1 cup chopped celery
  • two-thirds cup chicken broth
  • 2 cans cream of mushroom soup
  • 3 boneless, skinless chicken breasts, cooked and chopped
  • 3 T. Soy sauce
  • 2 cups cooked rice (three-fourths cup rice before cooking)
  • 1 cup chopped cashew nuts
  • three-fourths cup chow mein noodles

Place butter in large nonstick skillet. Saute’ onion and celery five minutes, stirring often. Add broth and soup; mix well. Simmer 5 minutes. Add chicken and soy sauce. Simmer 5 minutes. Mix in cooked rice. Place in well-sprayed 8-inch square baking pan or casserole dish. Bake, uncovered for 20 minutes at 350 degrees. Sprinkle cashews and chow mein noodles over top and bake 10 more minutes.

This serves well with a side of snow peas, steamed broccoli, or corn.
